So I finally have a blog. It was a challenge getting it to look exactly how I want it, now it's the challenge of keeping it up to date. Sometimes I would like a fun place to go to post things I've done or seen, funny stories or a place to put some of my scrapbooking ideas to share with others. Here it is. Hopefully you can find something that might be interesting or spark some ideas.

Not a Fan of Making Dinner


I was given a fabulous cookbook for my birthday this year (Thank you Annie Carron!) I'll admit, I hadn't had a chance to really use it until today and realized how this little book can improve my life!

Trevor (our one year old little boy) is now eating at the table and eats everything that we eat. You cannot get anything past him, if he sees you have it, he wants a bite! Since he has been eating with us, I have been doing my best to be sure every meal is balanced (all the veggies, protein, fruit, etc), healthy (less salt, less trans-fats, etc) and different (not a weekly rotation of tacos, macaroni and cheese, spaghetti, repeat). We have been doing a pretty good job to this point. Vic and I both are eating a lot healthier and getting all of our fruits and veggies. I also feel really good about Trevor getting a balanced diet. With that being said, I still do not really enjoy cooking and I hate that ever dreaded question, “what are we going to have for dinner?” I have to give Vic credit; he does a fantastic job of getting meal started before I get home from work. The majority of the time we decide in advance what we are going to make that week and he gets it started. It seems like lately, we are running out of ideas and with school and work and wanting to spend all of our time playing with Trevor, neither one of us wants to spend my free time cooking!

Today, I pulled out the Dinner's in the Freezer cookbook. I have been meaning to start using it but just haven't done it. I flipped through it and realized it has a number of wonderful recipes that are easy to prepare AND you can do the majority of it in advance. When I made things like lasagna and soup, I try to double the batch and put half in the freezer. It's really helped the portion sizes as well as making prep half the work. I can spend some time on a Saturday afternoon when Trevor is napping vs. on a Monday night after a long day of work putting a good meal together. Today I made the Orange Teriyaki chicken. I made three batches (took the same amount of time as 1 batch), made one for dinner and put two in the freezer for another time. The book gives you recipes for one batch, 3, 6 or 9. You don't even have to do the math. The recipes are all made specifically to make the actual cooking day easy and fast. Usually the cooking day consists of defrosting and baking. It's great! Now this may not be foreign to many of you as it is the same concept as Super Suppers, and I am not being paid to write this, though I wish I was! :)

I was thinking today, how great it would be to have 3 or 4 people that have the same book or recipes that work the same way, each person prepares 6 or 8 batches of the same dish, we all get together and trade and everyone ends up with 2 batches of 3 or 4 different dishes. The prep would be a quarter of the time and you would have up to 8 dishes in your freezer! This could also be expanded to more people, like 6 or 8 and again, prep time really wouldn't change much and you could buy some of the ingredients in bulk, making them cheaper. Another great aspect is that I NEVER have all the seasonings or ingredients when I want to try a new dish and it costs a small fortune to try to have everything on hand. Then, the chances of using it before it expires are basically non-existent.

I know this is not a new concept and probably something that people do all the time but it's something that I personally would like to try. I thought I'd share in case anyone else might benefit from the idea or might be interested. This would probably work best for families that are the same size. Vic and I still prepare meals for two and just share with Trevor. So, Mom & Erica, are you guys up for trying this???

Trevor's Birthday Party

There is a lot of pressure when planning your child's first birthday party. I felt is was a defining moment in my Motherhood experience. We have gotten him through his first year safe and healthy with minimal bumps and bruises, that in itself is something to celebrate. I started thinking about what the "theme" of this very important event might be. Everyone that knows me knows I am all about themes. Trevor is 1, he isn't "into" anything so it came down to what I am "into." I am not really into the regular toy themes and wanted to do something a little different. Boys are much harder than girls I found. I started thinking about food as this would be an important factor when feeding potentially 60 people. (Our families are big, what can I say!) I thought ham is easy and something most enjoy. Well, then it came to me, Green Eggs and Ham......Dr. Seuss! Trevor has a number of his books and Vic and I tend to gravitate toward those when reading him his bedtime stories. Perfect! I did a ton of research online as I wanted to make sure the theme was apparent in all aspects of his party.


This is what I came up with. I did spend a great deal of free time on his party but I think it was worth it. My little man seemed to love it and everyone who attended seemed to have a pretty good time!

Funniest part, Trevor will never remember it. Luckily, we took a LOT of pictures!


The Cake: It is what it is.

The cake was going to be the main piece of the party. Something that you could look at and know exactly what the party was all about. I did a madhatter style cake by baking 6 layers, 3 -8 inch and 3 - 9 inch rounds. Made buttercream icing from scratch (chocolate, vanilla and vanilla with a hint of orange). I decided to use buttercream for the blue, I thought it would look and taste better for the water. I made marshmallow fondant for the white and piped some accents on with more blue. The fish and water droplets were made my me and my Dad. Dad did a GREAT job on the fish. The fish idea was from One Fish, Two Fish, Red Fish Blue Fish. They were all created with gumpaste. I spentabout 4 hours the night before the party putting all the pieces together. From baking the cakes to making the frosting, this process had been going on for two weeks. It went together smoothly ( I was shocked) and turned out a lot like I had planned. I took some pictures, covered it in a large plastic bag to keep it fresh, left it on the dining room table and went to bed.

I came downstairs about 6 am. I looked on the table and there was no cake. I called for my Vic (my husband) and asked if he moved the cake. He comes running out and said "no, why?" My stomach dropped. I walked closer and saw a bit of the plastic bag sticking up from the chair. It's almost like in CSI, when someone walks in the room and sees a foot sticking out from behind the couch. The cake had toppled off of the table (I left it as you see it in the picture) and fell into the chair. At this point, all I could do was laugh. To this day, I am still wondering how it got from the position you see it in the picture to being in the red chair behind it. I will probably never know. I am working on trying to use the motto "it is what it is" more and more. This is one of the times I put it to good use. I pulled out the cake, see next couple pictures, and was able to salvage the top. I had two boxes of cake in the cuboard and started baking. Vic ran to the store and got frosting. Everyone was getting a piece of Betty Crocker sheet cake for the party!

I realized that the story ended up being so funny that it was almost better that this incident happened. Everyone got a laugh out of it and I think there was more talk and laughs about the cake this way than if everything had worked as planned!

There is a Banner on the window that Trevor's cousin made him saying " Happy Birthday Trevor." Kyle is 7 and one of the most practical kids you'll ever meet. He told me that he did not put his age on the banner so we could use it in the coming years!

Food: Don't forget the PID's!

The menu consisted of: Green Eggs (deviled) and roasted Ham, Who Hash (cheesy potatoes), vegetables (including Lorax trees made from carrots and peppers), relish tray, chips, pretzels, a crumb too small for even a mouse, One Fish, Two Fish, Red Fish, Blue Fish (gummy fish in a fish bowl), mints, peanuts, cake and ice cream.

I always think I should make more but we had an entire ham left over!!!!
